White Chicken Chili

Ingredients:
1 Rotisserie Chicken, shredded (Costco or Sam's Club)
2-3 cans, Navy Beans
1 Large Onion, chopped
1/4 cup Flour
32 oz Chicken Stock
2 cups, Half & Half
2 tsp Tabasco Sauce
1 1/2 tsp Chili Powder
1 tsp Ground Cumin
1/2 tsp Salt
1/2 tsp White Pepper
2 - 4 oz cans Mild Green Chilies, chopped and drained
4 oz can Jalapeno Peppers, chopped and drained
1 1/2 cups Monterey Jack Cheese, grated
Fresh cilantro, chopped
Instructions:
In a skillet melt 2 tbsp butter and sauté onion.
In large heavy pot, melt 6 tbsp butter and whisk in flour.
Cook roux, whisking constantly for 3 minutes.
Stir in sautéed onion, chicken stock and half & half, whisking constantly.
Bring mixture to a boil and simmer for 5 minutes or until thickened.
Stir in Tabasco, chili powder, cumin, salt and pepper.
Add drained beans, chilies, jalapenos, chicken and cheese.
Cook for 20 minutes.
Finally stir in chopped cilantro to taste.
