Vegetable Soup with Sausage or Beef

Ingredients:
  • 1 tbsp Olive Oil

  • 1 cup Onion, chopped

  • 1 tbsp Garlic, minced

  • 1.5 lbs Ground Italian Sausage or Ground Beef

  • 2 tbsp All-Purpose Flour

  • 1.5 cups Beef Stock

  • 35 ounces Original V-8

  • 1 - 14 ounce can Diced Tomatoes

  • 2 large Potatoes, peeled and diced

  • 6 cups Frozen Mixed Vegetables (carrots, corn, green beans)

  • Dash of Worcestershire Sauce

  • Couple dashes Hot Sauce

  • 1 tbsp Tony Chachere's Original Creole Seasoning (or to taste)

Instructions:
  1. In large heavy pot, heat oil over medium high heat.

  2. Add the onion, cook and stir until softened, about 4 minutes.

  3. Add the garlic and either ground sausage or ground beef; cook and stir until meat is browned. Drain excess fat.

  4. Sprinkle meat with flour; cook and stir for 3 minutes.

  5. Add the beef stock, V8 juice and diced tomatoes. Stir in the potatoes and frozen vegetables. Add worcestershire, hot sauce and seasonings taste.

  6. Stir, cover and simmer over medium low for about 2 hours, stirring occasionally.

Notes:

Serve with some fresh made warm buttered cornbread or a crusty loaf of bread.
