Ingredients:
5lb Pork Loin
2 qt Ice Water
5 tbsp Salt
3 tbsp Sugar
1 tbsp Hickory Smoke, liquid
1 tsp Cure #1
Brine Method:
Make a curing pickle by dissolving all ingredients (except pork loin) in water and chill.
Inject the pork loin with the brine.
Place pork loin in a plastic bag or container and add remaining brine.
Refrigerate for 3 days.
Wash the pork loin under cold water. Allow to dry slightly at room temperature.
Rub the entire surface of the pork loin with coarse corn meal; chill in refrigerator. Repeat if a thicker crust is desired.
Cooking Instructions:
Preheat oven to 300 degrees.
Place pork loin on a rack in baking pan.
Put 1/2 inch water in bottom of baking pan.
Cover loosely with aluminum foil.
Bake for 75 minutes.
You can either eat it baked or slice and pan fry for additional flavor.
