Canadian Style Bacon

Ingredients:
  • 5lb Pork Loin

  • 2 qt Ice Water

  • 5 tbsp Salt

  • 3 tbsp Sugar

  • 1 tbsp Hickory Smoke, liquid

  • 1 tsp Cure #1

Brine Method:
  1. Make a curing pickle by dissolving all ingredients (except pork loin) in water and chill.

  2. Inject the pork loin with the brine.

  3. Place pork loin in a plastic bag or container and add remaining brine.

  4. Refrigerate for 3 days.

  5. Wash the pork loin under cold water. Allow to dry slightly at room temperature.

  6. Rub the entire surface of the pork loin with coarse corn meal; chill in refrigerator. Repeat if a thicker crust is desired.

Cooking Instructions:
  1. Preheat oven to 300 degrees.

  2. Place pork loin on a rack in baking pan.

  3. Put 1/2 inch water in bottom of baking pan.

  4. Cover loosely with aluminum foil.

  5. Bake for 75 minutes.

  6. You can either eat it baked or slice and pan fry for additional flavor.
